There is a couple different versions of this Pita Pie that I make, so don't stress if you don't have the ingredients exactly. Also I often make the pastry but this time I brought Gluten Free Pastry.
Ingredients Gluten Free Pastry -
1 Large Zucchini Halloumi, Handful grated Mint - Pinch Eggs x 2
Mushroom - Hand full cut up. Optional Pecorino Cheese just a sprinkle Butter to grease Dish. ( I used a 30 x 15 cm backing dish, however just use one that you can cover with the Pastry sheets. Top and Bottom Directions
Grease Dish with Butter - Pre heat oven Lay the Pastry sheet to cover bottom and sides of Dish Grate the Zucchini and squeeze the water out. Place in Bowl Add Egg, Cheese and Mint. Mix gently with you hands. Put mixture in dish on top of Pastry. Cover with remaining Pastry and you can apply a little butter or egg on top to glaze. Bake on 180oc for about 40min. Just keep checking to make sure that the top isn't getting too brown. Cooking time can vary.
Let it cool for 5 min and cut and serve with a delicious fresh Salad.
