Our garden is doing so well this year and we have been cutting many zucchini's every day. I wanted to find a way to get the amazing goodness of home grown organic zucchini into my little toddlers and they are over zucchini slice. Hubby had a great idea to make some dip.
4 Zucchinis cut into quarter chunks. roughly 2 cm.
1/2 cup extra virgin olive oil
2 clove garlic, finely chopped
1 teaspoon coriander seeds, roughly crushed or optional 1 drop doTERRA Coriander Essential Oil
Salt to taste Ground black pepper Juice of 1 lemon or optional 2 drops doTERRA Lemon Essential Oil.
Method - Heat 2 teaspoons of olive oil in the saucepan over a high heat, pop the zucchini, garlic, coriander and season with salt and pepper,. Drop the heat right back to low. Cover tightly and cook for 20 - 30 min mixing often till tender.
Move from heat and use a fork to mash the zucchini, season to taste with the lemon and more salt and pepper if needed. Use a food processor and process briefly, add some more olive oil and lemon if needed. Enjoy. Serve with cut cucumber, carrot, celery. Gluten Free, Vegan, Dairy Free, healthy and tastes amazing.
