Lasagna - for cold winter days is so needed. But what about making it healthy?
I wanted to make Lasagna that was FULL of Veggies, Gluten Free, Dairy Free. Ditch the Gluten free Lasagna sheets to make it PCOS friendly too. It's really tricky to fulfil all of those in one meal. AND if you want to go MEAT FREE. Then I tell you what to change over.
I wanted to see how many calories each portion would be. So I jumped into my FITNESS PAL and added each item. This serves 10 - 12.
I divided it into 10 so you can have a big serving and let me tell you there is no guilt here. 250 calories per serve.
Gluten and Guilt Free Lasagna
San Remo Gluten Free Lasagna sheets - 1 container
2 tsbs - Tomato Paste
1 bottle Tomato Passata Sauce (700gs)
1 large Onion
3 Garlic cloves
1/4 head Cabbage
1 can Cannellini Can ( MEAT FREE use 2 cans)
250 gms beef mince. 1 Bag frozen Veg - Carrot, Pea, corn 1 large Zucchini
1/2 Red Capsicum 1 tbs Hemp sees
1 tsp Salt
1 tsp Pepper 1 tsp Tumeric 1 pinch Paprika 1 cup Veg stock
2 drops doTERRA Oregano Essential Oil (optional) Filling
1 tbs Nutritional Yeast
1 large sweet potato Half head Cauliflower
Preheat Over to 200oc
Fill large saucepan with water and cut up Sweet potato an cauliflower and add in. Boil till soft. I use a large saucepan so I can also pop the lasagna sheets in. Less cleaning up! While boiling, pop a pan on medium heat and 1 tbs olive oil and add chopped up onion and garlic. Cook for a few min. If you have a Thermomix or food processor up it will come in handing to chop blend along the way. Add mince. While browning add salt, pepper, tumeric, paprika and veg stock. Then add Tomato paste and Passata add water and let simmer. Blitz 1 zucchini, red capsicum and Cabbage. Add to the pan with mince. Wash Cannellini, Blitz and add to pan with the mince. Let it simmer. Add a little more water and let all the flavours come together. Add 1 - 2 drops of Oregano oil if you wish. We do! While that simmers.
Get a large tray - add 2 tbs water and 1 tbs olive oil to the bottom.
Start adding 2 - 3 lasagna sheets with the boiling sweet potato and cauliflower. As you take them out lay them in the tray. They only need about 1 minute. Lay half the gluten free sheets on the bottom and save half for later.
Add the Mince and Veg mix to the large tray on top of the sheets.
Take out the cauliflower and sweet potato from the water and blitz.
Now put the top layer of lasagna sheets then the cauliflower and sweet potato mash on top. Spinkle salt and pepper to taste. Nutritional Yeast
and Hemp seeds. Use a fork to just smooth it out. Pop in the oven for about 20 min.
Once out let it sit for 5 min. Serves 10 - 12 people.
Great for freezing too!
